I'm not 100 percent sure but I remember a substitution is to use lemon/lime juice or vinegar. If the recipe calls for 1teaspon of cream of tartar then use 2 teaspoons of the substitute. I did this on cookies a couple weeks ago and turned out fine.What happens if you do not put cream of tartar in snickerdoodle cookies?
Omit the baking soda as well and replace with an amount of baking POWDER that equals the soda and cream of tartar.
If you don't use anything, you won't get any rise.
It works.
It has less of a crunch and is a softer cookie. If you don't have crean of Tartar make a smaller cookie.
Make sure you use baking powder- if your recipe does not all ready have it -if you are eliminating the Cream of Tartar. My recipe has both.
They would just be like round Sugar cookies rolled in cinnanmon sugar. They might not have the';cracks in the top

Put the same amount of white vinegar for the same amount of cream of tartar it works fine.
it helps the cookies rise and makes them more tender. You can use 3 teaspoons of baking powder in place of the baking soda and cream of tartar.
They'll taste much better!
