melt 1 Tbsp butter in 1 Tbsp. EVOO, add a bit of garlic, before it turns brown, add salt and squeeze a lemon half into it. Toss w/ pasta.





Tomato sauce is lowfat.





Mushroom Walnut Sauce for Pasta





2 Tbsp. extra virgin olive oil


8 oz. Mushrooms - sliced


1/4 C. Walnuts - chopped


3/4 C. Heavy whipping cream


1/4 tsp. Black pepper


1/2 C. Fresh Parmesan - grated





Heat olive oil in large skillet over medium heat. Saute mushrooms and walnuts until mushrooms are golden. Add cream and cook stirring frequently for 5 minutes until slightly thickened. Turn heat to warm and when cream stops simmering, add pepper and Parmesan and stir until sauce is smooth. Do not boil. Serve over pasta. Especially good w/ stuffed pastas.

There are tons of ideas for low-fat pasta dishes:





1. Toss linguini with sundried tomatos, fresh basil and shaved parmesan cheese.


2. To diced tomatos add a little olive oil, balsamic vinagrette, fresh basil, oregano, and rosemary, simmer until thickened, add 1/2 cup fat free half and half and grated parmesan cheese.


3. Make a meat sauce from lean turkey Italian sausage sauteed with onion and minced garlic. Drain. Add low sodium and low fat tomato sauce and 3 T olive oil. Add 1/2 cup chopped fresh basil and 2 T dried Italian herbs. Bring to a boil and reduce heat to simmer for 30 minutes. Add salt and pepper to taste. Toss with your favorite whole grain pasta and add parmesan or asiago cheese.


4. Toss hot linguini with marinate artichokes (rough chop), diced fresh tomatos, and lean turkey kielbasa. Top with shaved parmesan.
Any pasta sauce that I have made is low fat and never contains milk products of any kind.


I start with


1 medium chopped Spanish onion fried in 2 tbsp of olive oil.


add 4-5 sliced mushrooms


when ready pour into pan 1 can of Primo style tomatoes of your choice, there are many.


Add some spices or herbs. such as


3/4 tsp garlic powder


1/2 tsp salt


1/4 tsp pepper


To make your sauce hot/spicy, you can add a 1 or 2 drops of Tabasco sauce


1 tbsp honey-takes away the zippy/acidity tomato taste


let simmer for 15 minutes


1 tbsp mixed Italian spice or oregano.


There you have a very low fat pasta sauce and tastes good too.
