I have worked at a major US ice cream plant for a few years now. I won't name which company I work for, but I will inform you of some things that can have an effect on ice cream. For one thing, the more fat content in the cream, the more expensive it is to make, and the better it tastes. That's why our premium flavors come in the prettiest packaging, and also why they are more expensive than ice cream with lesser fat content. Our processing department controls exactly how much milk fat is added to each batch we make. Another thing that can effect it is the flavoring added (to the flavor tanks) before it is pumped into our liquid ammonia chilled high speed freezers. The operator has a very strict recipe given to him before we start each batch. One last thing that can have influence is how quickly the ice cream is frozen once it is pumped into the package. We send our ice cream down the conveyor, and into a special section of the freezer that is controlled by computers and robotics. It spends approximately 4 hours inside the moving shelves inside this section which is 40 degrees below zero, and when it comes out the other end, it is only 20 degrees below zero where it is palletized and stored. This rapid drop in temperature, and the four hour hold time is very important because it prevents the formation of ice crystals, which can ruin the texture of the ice cream, and therefore the taste. Ice cream companies who do not have the technology, money, or the quality controls in place to do all the things I mention will produce a lower quality product. Cheap ice cream is cheap for a reason. Personally, if you would rather save a buck and buy that cheap ice cream, then go for it. But if you are picky like me, and you love food, and you care about quality, it is worth it to spend an extra few bucks for premium ice cream from a major brand like us. I can't imagine there being much difference, perhaps in the processing of the milk, and of course the way they flavour.
It would be mixing the flavourings that would have the greatest differences and they are probably closely guarded secrets.
If you made one of the best selling icecreams, you would keep the actual process as secret as possible.
Yes, im sure there is differences, put not large ones... For example, the ingrediants would obviously differ, and perhaps they use more of this and less of this, and they might mix it differently... Perhaps it's hand made, mabey they freeze it longer, ect ect... but overall, it won't affect the ice cream much.
not generally generally the difference is in the quality of the ingredients... lower fat milk is cheaper and makes worse ice cream.
