There's New York style cheesecake, which is heavy and has a drier texture, versus the creamy style, which is more like a pie--think ';Sara Lee'; from the frozen foods case.
The first is better, IMHO.
You really have to use traditional brick cream cheese for the first one, or it won't hold together. And regular Philly is the best because it's firmer than store brands. So don't cut corners.
Most recipes don't used whipped cream--it's sour cream, for flavor.
