French vanilla ice cream

Ingredients


2 cups milk


1 cup sugar


6 egg yolks, lightly beaten


1 tablespoon pure vanilla extract


1 pint heavy cream





Method


Beat milk, sugar and egg yolks in the top of a double boiler until frothy. Set over simmering water and heat 15 minutes, stirring now and then at first, constantly toward the end. Cool, add vanilla and cream.





Freeze in a crank 鈥?type freezer [hand or electric] or automatic ice cream machine, following the manufacturer鈥檚 directions.





Hot fudge





Ingredients


8 oz. chopped dark chocolate


7 tablespoons unsalted butter, softened


1/2 cup sugar


1/2 cup heavy cream


1/4 cup hot water


1 teaspoon pure vanilla extract


pinch of salt





Method


Combine chocolate, butter, sugar, heavy cream and water in the top of a stainless steel double boiler. Melt chocolate mixture, stirring with a wooden spoon, over simmering water, at medium-low heat, about 5 minutes. Remove from heat and stir in vanilla and salt. Serve warm over ice cream.Sauce may be stored in the refrigerator for up to one week. Reheat in a microwave or double boiler.How do you make homemade vanilla ice cream?

Ingredients:


4 egg yolks


1/2 pint (250ml) milk


1/2 pint (250ml) double/heavy cream


4 oz (100g) sugar or caster sugar


1 vanilla pod (sliced down the middle)





Pour the milk into a saucepan and bring the pan slowly up to boiling point. Place the vanilla pod into it and leave to infuse for about 20 minutes.





In a bowl, beat and mix together the egg yolks and sugar until thick. Carefully remove the vanilla pod from the pan of milk and scrape out the seeds into the milk. Pour the milk into the mixture of egg yolks and sugar whilst stirring. Pour the mixture back into the pan and heat gently, stirring until the custard thickens - DO NOT BRING TO THE BOIL OR IT WILL PROBABLY CURDLE. When you can see a film form over the back of your spoon it's time to remove the saucepan from the heat. Leave to cool. When the custard base is cold stir in the cream. Transfer the whole mixture into an ice cream maker and freeze according to the manufacturer's instructions.





VANILLA ICE CREAM is also fantastic in ice cream sandwiches


You can also use your vanilla ice cream in a Knickerbocker Glory or Vanilla ice cream sundae or as a base for Raspberry Ripple ice cream.
